Stoplight Chicken Skillet with Rice

Serves: 4-6

Time: 45 min

Difficulty: Easy

This evening I found myself in the mood to add another recipe to my 50 in 15 Challenge. I had some extra colored bell peppers on hand, and inspired by my similarly-named Stoplight Chicken Pizza, I decided to throw some of them together with a few other veggies and some chicken in a skillet, and serve over some brown rice for a nice, healthy dinner. I must admit that the end result is quite phenomenal. It’s easy to make, is very flavorful, and has just a bit of a kick from the crushed red pepper that’s added. This is most definitely a recipe I’ll be making again soon.

Vegetarian Black Bean & Brown Rice Burgers

Vegetarian Black Bean & Brown Rice Burgers

Difficulty: Medium

For a while now, I’ve had a hankering to try my hand at making a nice, healthy black bean burger as part of my 50 in 15 Challenge. Well tonight, I finally gave it a shot. I found a great recipe from the Beachbody Blog that I ended up using. It’s vegetarian-friendly, is a great source of protein, and is an amazing (and dare I say, better tasting) substitute for many meat-based burgers. The process of making these burgers is pretty straightforward and easy, but I will warn you that it gets a bit sticky once you start to form the patties. Trust me though, it’s well worth it, as the end result is nothing short of phenomenal.

Difficulty: Easy

This past Saturday, I was inspired to make something new for my 50 in 15 Challenge. And since it’s still bitterly cold outside here in Michigan, I wanted to make a nice, warm comfort food. So I decided to whip up a hearty and healthy chili in my crock pot that would cook all afternoon and be ready for dinner. The end result was a delicious and hearty bowl of goodness that really helped warm up an otherwise chilly day. And as an added bonus, I also made some delicious and tender Sweet Cornbread Muffins to accompany the chili.

Lasagna Bruschetta

Lasagna Bruschetta

Time: 20 min

I’ve mentioned before that my wife and I have become big fans of trying new types of “bruschetta” for our meals. Last night we decided to pair an entrée salad with some Lasagna Bruschetta — a concoction I devised a few months ago to use up some leftover pasta fixings. The thing I absolutely love about Lasagna Bruschetta is that it’s super-flexible. You can use a different types of cheese, fillings, and bread based on what you have on hand and/or your own personal taste. The recipe here uses low-fat cottage cheese and veggies for a healthy, vegetarian-friendly dish.

Heart-Healthy Minestrone Soup

Heart-Healthy Minestrone Soup

Serves: 6-8

Time: 50 min

Difficulty: Easy

I’ve been on a big soup kick lately. And on a relaxing Sunday afternoon (especially during another Michigan winter), there’s something especially comforting about making a fresh batch of homemade soup. I’ve made a variety of soups already, but today I tackled a heart-healthy homemade Minestrone for the first time, and boy was it delicious. It proved to be a perfect addition to a side salad for the first course of our dinner of Lasagna Rolls. And since it was my first time making Minestrone, I am also able to check off another recipe for my 50 in 15 Challenge.
