My wife found a recipe for no-roll chicken enchiladas a while back after having it at a friend’s house, and passed it along as a potential dish for us to try. With a little modification, I came up with the following recipe, which is a ridiculously flavorful and filling Mexican meal worthy of making again. And while it takes a bit of time to finish (mostly inactive bake time), the result is well worth it.

The other day, my wife and I were jonesing for something cheesy for dinner, and so I took to looking for a healthy “mac and cheese” recipe to satisfy our taste for all things cheesy, while keeping it nutritious. I found a recipe for Broccoli Mac and Cheese in my Good Housekeeping 400 Calorie Meals cookbook, and gave it a whirl. Admittedly, I altered the recipe a bit to suit the types of cheese I had on hand (and to use a different pasta noodle other than macaroni). But after all was said, done, and baked, the end result was nothing short of delicious. If you’re in the mood for some homemade “mac and cheese”, give this recipe a shot — it’s sure to satisfy your craving for all things cheesy!

A few weeks ago, my wife shared a link with me for a recipe for Hasselback Chicken, asking if I could make it for her some time. So, the other night, I decided to give it a whirl for her. Being a vegetarian, I didn’t actually get to taste the result of my labor, but she told me that it was quite delicious, and a dish worth making again. I paired this recipe with some fettuccini tossed in a spinach and artichoke sauce, as well as a small side salad. If you’re a fan of cheese and only like spinach when it’s cooked, you should really give this recipe a try. I think you’ll like it!

The other night I wanted to try a new recipe, and was jonesing for some cauliflower. My cousin shared a Cauliflower Mac n Cheese recipe from the My Fitness Pal blog. With a few minor modifications to the original recipe, I ended up with a delicious and healthy result that I highly suggest you make. If you love “mac and cheese”, I see no reason why you won’t love this even more!

Skillet Broccoli Shells and Cheese

While at the grocery store a few weeks ago, I picked up the September issue of Cooking Light magazine, being intrigued by the cover photo of  “One-Pan Broccoli-Bacon Mac ‘n’ Cheese”. Knowing that my wife loves mac and cheese (and bacon), I knew I had to give the recipe a try. I modified the recipe a bit to suit my needs — most notably leaving the bacon off of my serving (since I’m vegetarian). Also, I used vegetable stock rather than chicken stock, and opted to use whole-grain shells rather than macaroni, because let’s be honest… macaroni is such a cliché pasta.

To say that I was pleased with the end result would be an understatement. Both my wife and I immediately fell in love with this dish, despite both of us being tentative about how the inclusion of butternut squash puree would play out. But in the end, I’d definitely make this recipe again. It was a fantastic, warm, and flavorful comfort food, perfect for a chilly September football Saturday dinner after watching our University of Michigan Wolverines win their home opener against Oregon State. And it was yet another great addition to my 50 in 15 Challenge.

If you’re looking for a slightly lighter and healthier homemade “mac” and cheese recipe, give this one a shot. You’ll be glad you did!
