Pao de Queijo (Brazilian Cheese Puffs)

The other night, I was in the mood for some culinary exploration, and decided to do a “small plates” meal for my wife and I. While searching for ideas and inspiration, I stumbled upon a recipe for Pao de Queijo on the Spice or Die website. Admittedly, I had never even heard of Pao de Queijo. But after reading the post and recipe on Spice or Die, I knew I had to give the recipe a whirl. The end result was nothing short of phenomenal. Each puff was light, airy, and deliciously cheesy. If you’re looking for a nice light and cheesy side dish and/or appetizer for your next meal, look no further. This one is a definite winner!

Ingredients

  • 1 egg
  • 1 1/3 c. tapioca flour
  • 2/3 c. whole milk
  • 1/3 c. olive oil
  • 6 oz. queso fresco (or similar), crumbled
  • 1 tsp. salt
  • 1/8 tsp. pepper

Directions

  1. Preheat oven to 400° F. Add the egg, milk, olive oil, queso fresco, salt, and pepper to a blender. Put the tapioca flour on top and blend on low, scraping the sides as needed to fully incorporate the flour.
  2. Pour the batter into a greased muffin tin pan and bake for 20 minutes, or until puffy and golden. Serve immediately.

Notes

As mentioned above, I was very happy with the end result of this recipe. I did deviate slightly from the Spice or Die recipe, using 1/2% milk instead of whole milk. And I also used Asadero cheese in place of the queso fresco, as it wasn’t available at my local grocery store.

I also found that these puffs reheat quite well, as the following morning, I wrapped a couple in aluminum foil and popped them in a 400° F oven for a few minutes. Once warmed, I cut them in half and spooned some strawberry jam inside each of the halves. And let me tell you, the jam was a delightful pairing to the cheesiness of the puffs.

Like I said above, if you’re looking for a nice light and cheesy side dish and/or appetizer for your next meal, look no further. This one is a definite winner!
