Creamy Tomato Basil Soup
The other day, my wife requested that I make Tomato Basil soup some time. Rather than just getting a can of it at the store, I decided it was high time to try my hand at a new recipe. So I sought out some recipes and found one that seemed like a good one (though let’s be honest, most every recipe was about the same). Well, I gave the recipe a go, and admittedly, it was a complete bust. I followed the recipe exactly, and the end result was bland and overly brothy. So I had to improvise and add in some last-minute magic. In the end, my off-the-cuff efforts were worth it, as the final product was one of the best Tomato Basil soups that my wife and I have ever had. Black Bean Chili
Being a big fan of soup, I’m always on the lookout for new recipes — or at least variations on recipes I’ve made before. Well one of my all-time favorite soups is black bean chili, which I recently found a recipe for on the Beachbody Blog. I used their recipe as a base, but made a few tweaks of my own based on what I thought would be good additions. The end result was nothing short of my quintessential black bean chili — it’s hearty, healthy, Vegetarian-friendly, all sorts of delicious, and pairs perfectly with some Sweet Cornbread Muffins. And it made for another nice addition to my 50 in 15 Challenge.
Vegetarian Black Bean & Brown Rice Burgers
For a while now, I’ve had a hankering to try my hand at making a nice, healthy black bean burger as part of my 50 in 15 Challenge. Well tonight, I finally gave it a shot. I found a great recipe from the Beachbody Blog that I ended up using. It’s vegetarian-friendly, is a great source of protein, and is an amazing (and dare I say, better tasting) substitute for many meat-based burgers. The process of making these burgers is pretty straightforward and easy, but I will warn you that it gets a bit sticky once you start to form the patties. Trust me though, it’s well worth it, as the end result is nothing short of phenomenal.
Slow-Cooker Chicken Mango Curry
Having a few days off of work, I decided to tackle another new recipe for my 50 in 15 Challenge. Seeking inspiration for a new and healthy recipe, I sought out the help of my sister, who shared this recipe with me. I’m not entirely sure where she got the recipe, but I’m sure glad she shared it with me, as the end result was absolutely delicious. It’s not too spicy, and is a nice cross between a curry and stew, with the mango adding a nice sweet touch, and the cashews giving a bit of crunch. All-in-all, it was a great addition to my 50 in 15 Challenge, and proved to be a delicious recipe I’ll no doubt make again in the future.
