The other day, my wife and I were jonesing for something cheesy for dinner, and so I took to looking for a healthy “mac and cheese” recipe to satisfy our taste for all things cheesy, while keeping it nutritious. I found a recipe for Broccoli Mac and Cheese in my Good Housekeeping 400 Calorie Meals cookbook, and gave it a whirl. Admittedly, I altered the recipe a bit to suit the types of cheese I had on hand (and to use a different pasta noodle other than macaroni). But after all was said, done, and baked, the end result was nothing short of delicious. A little while back my wife and I were in the mood for a nice risotto entrée, and I was jonesing to try something new. After some searching, I found a recipe that used butternut squash, and with a few minor tweaks to the recipe, ended up with one of the most delicious risottos I’ve ever had — creamy and flavorful. Ratatouille with Garden Risotto
This past weekend, after seeing a post on Facebook for DIY: Create Remy’s Ratatouille, I was inspired to make myself some homemade Ratatouille, and because I’m a bit of a food and movie geek, I decided to pair it with a screening of the Pixar movie Ratatouille. Luckily, my wife indulged me in this potentially silly “Ratatouille Night”.
The dish itself is simple enough, consisting of baking sliced veggies along with some tomato sauce. To add a bit more substance to the meal, I decided to serve the Ratatouille atop my favorite homemade Garden Risotto recipe from Food Network’s Ellie Krieger. The end result was healthy, flavorful, and outright delicious — and a perfect pairing for watching the movie!
