Blueberry Cream Cheese Omelettes
This morning, I was jonesing to make a University of Michigan inspired breakfast in honor of the Wolverine’s 2018 football season kicking off. In the past, I’ve made lots of blueberry muffins, pancakes, and even block M pancakes. But today, I wanted to do something new. So after a bit of searching for inspiration, I decided upon these Blueberry Cream Cheese Omelettes, which were inspired and compiled together via a couple different recipes I found. The end result was delectable and delightful. It wasn’t as sweet as a crêpe, and not as savory as a “regular” omelette, but was a nice amalgamation of the two. So if you’re looking for a new recipe that will satisfy both sweet and savory, give this a shot. You’ll be glad you did!
Beignets
This past Sunday morning, I wanted to surprise my wife with one of her favorites: Beignets. We had recently attended a food truck rally, which has a beignet truck that is her absolute favorite, so this treat was definitely on our minds. I found a beignet recipe from Just a Pinch Recipes, and whipped up a half-recipe, which ended up making about 20 beignets (sized about 2″ x 3″). The recipe for the dough isn’t hard at all — it’s the frying that can get a little messy. But that aside, the end result was absolutely delectable, totally worth the frying mess, and definitely a recipe I’ll be making again. Broiled Brown Sugar Banana Pancakes
This Saturday I was in the mood for making a nice new breakfast recipe, and found an amazing recipe for Broiled Brown Sugar Bananas in the Good Housekeeping 400 Calorie Meals cookbook. I decided to try it, but rather than just making them on their own, I chose to pair it with some homemade pancakes. The result was an amazingly tasty, warm, and comforting breakfast that I’ll gladly make again. So if you’re in the mood for a new twist on boring old pancakes, give this a try — it’s super easy, and is sure to please your taste buds.
Pizza Americana
This is my go-to pizza dough recipe for pizzas I make in my oven. It’s a great all-purpose recipe, and is useful in its strength and ability to hold more toppings than other styles of dough. It produces a bread-like crust that’s both filling and deliciously tasty. And we all know that the dough is arguably the most important part of the pizza, as it is more often than not the culprit of making or breaking the final product.
Peruvian Rice Pudding
As previously mentioned in the post for Groundnut (Peanut) Stew, my wife and I received a newsletter for each of our children that we sponsor through Compassion International, which contained a recipe for a native dish that is typically eaten by the child. Still inspired by the recipes and having already made the Groundnut (Peanut) Stew (a dish from Northern Uganda where our sponsor child Stuart lives), it was time to try the recipe for Rice Pudding, a dish from Peru, where our other sponsor child Patricia lives. Admittedly, I’ve never made or even eaten Rice Pudding, so I didn’t exactly know what to expect. But to my delight, the final result was very tasty. Definitely a dish I wouldn’t mind making again.
