As mentioned in the recipe for Bacon Asparagus Pastry Twists, my family and I were hosting guests a few nights ago, and I was in the mood for some new recipes. I found a Three Course Tuscan Dinner article and decided to try my hand at the appetizer and main course. The appetizer was delicious, and this Creamy Tuscan Chicken was, in my humble opinion, even better. It is creamy and very flavorful, and paired wonderfully with whole wheat spaghetti with a side salad. If you’re looking for a new chicken/pasta recipe, I highly recommend this one. A few weeks ago, my wife shared a link with me for a recipe for Hasselback Chicken, asking if I could make it for her some time. So, the other night, I decided to give it a whirl for her. Being a vegetarian, I didn’t actually get to taste the result of my labor, but she told me that it was quite delicious, and a dish worth making again. I paired this recipe with some fettuccini tossed in a spinach and artichoke sauce, as well as a small side salad. If you’re a fan of cheese and only like spinach when it’s cooked, you should really give this recipe a try. I think you’ll like it!

One of my favorite kinds of pizza is my Sweet Potato Pizza. It’s not your stereotypical pizza, as most Americans envision. It doesn’t use any marinara sauce, doesn’t have any of the standard toppings, yet is delightfully flavorful and unique in its own right. The sweetness of the cheese paired with the savory richness of the caramelized onion and oven-roasted sweet potatoes makes for an absolutely delicious end product that’s sure to please!

Pizza All Day!

Pizza All Day!

Last Saturday I decided it was high time to try some new pizzas. So I set out on a quest that, thanks to my sister, was coined #PizzaAllDay. Starting at breakfast and continuing through dinner, I ended up making 4 new pizza creations. It was a lot of time in the kitchen, but anyone who knows me knows how much I absolutely love homemade pizza days, so it was well worth it. And since all of these pizzas were new, they’re qualified for my 50 in 15 Challenge, moving me one step closer to my 50th recipe.

For all of these pizzas, I used the Pizza Americana dough recipe from my go-to pizza book, American Pie: My Search for the Perfect Pizza by Peter Reinhart. It’s a great all-purpose dough recipe that works perfectly for me when making pizzas in my oven.
