A few weeks ago, I was in the mood for pizza, but also for quesadillas. So I thought I’d marry the two together to form one delicious concoction: Pizzadillas! They a lot like a calzone, just in a tortilla, and are pretty simple and straightforward to make, requiring just a bit of oven time in a couple steps of the process. But you can make them with whatever you like on your pizza, making them easy to personalize. The end result has been nothing short of extraordinary, and has quickly become a lunchtime favorite of my wife and me. In the process of skimming over the article, I saw a recipe for these Spicy Roasted Chickpeas and knew I had to make them right away. The other day, I had a strong desire to make something with a little kick. I realized that I haven’t had jambalaya in a while, and wanting to try a homemade version of the popular Louisiana Creole dish that I could count toward my 50 in 15 Challenge, I found a couple of recipes that I fused together to suit my liking. One caveat was that since I’m now vegetarian, I had to substitute out the traditional meat (chicken or sausage) for some vegetarian sausage, which I didn’t mind at all. The end result was a delightful dish that had the perfect amount of spiciness . So if you’re in the mood for something with a bit of kick, give this recipe a shot.
