Roasted Brussel Sprout & Balsamic-Glazed Onion Pizza

I love making homemade pizza. It is infinitely better than “fast food” pizza from one of the big chains. And it affords me the chance to not only spend some quality time in the kitchen (or outside with the grill) and even experiment with different topping combinations. Well this past Sunday night — quasi-officially known as “Pizza Night” at our house — I was inspired to attempt a new kind of pizza. I had a few brussel sprouts on hand from earlier in the week, and decided to try a bold and flavorful combination of roasted brussel sprouts and onions in a balsamic vinegar reduction. I had no idea how it would turn out, but in the end, I was pleasantly surprised with the result. It was a bold pizza to be sure, but was also delightfully flavorful. And even though I’m no newbie to pizza, I decided that this exploration of a new combo of toppings warranted an entry into my 50 in 15 Challenge.

Last week, my wife and I received a newsletter for each of our children that we sponsor through Compassion International. One of the items included in each newsletter was a recipe for a native dish that is typically eaten by the child. Feeling inspired by the recipes, and seeing the opportunity to add the new recipes to my 50 in 15 Challenge, I decided to try my hand at each one.

First up was this recipe for Groundnut (Peanut) Stew, which is a recipe from Northern Uganda where our sponsor child Stuart lives. I looked at a few other recipes for Peanut Soup, and saw that there is a variety of ingredients that can be used, but I chose to stick with the recipe and ingredients from the Compassion newsletter. The end result was surprisingly tasty — sort of like a peanut-flavored vegetable curry. And it just so happens that it’s both vegetarian- and vegan-friendly.

As part of Meat Free May, I’ve found myself eating a fair amount of soups and salads. One of my favorite soups that I’ve made so far has been a Tuscan Vegetable Soup recipe that I found on the Food Network website. I made a couple of minor modifications to the recipe to suit my own preferences and tastes, but the recipe is largely unchanged. It’s a delicious and satisfying recipe, packed with tons of veggies and plenty of flavor. It’s not only been a great addition to my Meat Free May, but also to my 50 in 15 Challenge.

If you’re in the mood for a good bowl of vegetarian- and vegan-friendly soup, give this one a try. You’ll be happy you did.

Quinoa Quesadillas

A few days ago, some of my coworkers and I were talking about food, and we somehow got on the topic of “Foods that start with Q”. After mentioning a few Q foods, I half-jokingly mentioned that I should make Quinoa Quesadillas — a nice double-Q food dish. Well, one of my coworkers took that seriously, and challenged me to make them by the next time I saw him. Not being one to back away from a culinary challenge, I decided to give it a shot. After all, this also provided me the opportunity to chalk up another new recipe for my 50 in 15 Challenge.

At first, I wanted to make Quinoa Tortillas for the quesadillas, but after discovering the ridiculously high price tag on Quinoa Flour, I decided that I’d just use regular whole-wheat tortillas, and make some Mexican Quinoa to use as part of the filling of the quesadillas. In the end, I was very happy with my creation of Quinoa Quesadillas, and I think my coworker will be pleasantly surprised with my efforts.

This past Saturday, I was inspired to make something new for my 50 in 15 Challenge. And since it’s still bitterly cold outside here in Michigan, I wanted to make a nice, warm comfort food. So I decided to whip up a hearty and healthy chili in my crock pot that would cook all afternoon and be ready for dinner. The end result was a delicious and hearty bowl of goodness that really helped warm up an otherwise chilly day. And as an added bonus, I also made some delicious and tender Sweet Cornbread Muffins to accompany the chili.
