Blueberry Cream Cheese Omelettes
This morning, I was jonesing to make a University of Michigan inspired breakfast in honor of the Wolverine’s 2018 football season kicking off. In the past, I’ve made lots of blueberry muffins, pancakes, and even block M pancakes. But today, I wanted to do something new. So after a bit of searching for inspiration, I decided upon these Blueberry Cream Cheese Omelettes, which were inspired and compiled together via a couple different recipes I found. The end result was delectable and delightful. It wasn’t as sweet as a crêpe, and not as savory as a “regular” omelette, but was a nice amalgamation of the two. So if you’re looking for a new recipe that will satisfy both sweet and savory, give this a shot. You’ll be glad you did!
Grilled Three-Cheese with Tomato, Basil, & Honey
For Mother’s Day this year, I wanted to treat my wife to something extra special. One of her favorites is the Grilled Three-Cheese Sandwich from Café Muse in Royal Oak, Michigan. Their sandwich first received national attention being featured in a 2008 Esquire Magazine article about the “best sandwiches in America”, was later featured on Oprah in a “sandwich showdown”, and has been named as the “best grilled cheese sandwich in Metro Detroit” (Detroit Free Press) and “one of the perfect grilled cheese sandwiches in America” (Reader’s Digest). Unfortunately, trying to get a reservation at the renowned Café Muse on Mother’s Day is near impossible, so instead, I decided to make it at home for us to enjoy. The end result was absolutely delicious, and is most definitely a recipe I’ll be making many more times to come. If you’re a fan of grilled cheese, do yourself a favor and make this recipe soon. Honeydew Smoothies
This morning for breakfast, I decided to make my wife and I some smoothies. And with a full honeydew melon on hand to utilize, I thought I’d try out a recipe I found on the Food Network website (with one small additional ingredient). I was admittedly nervous about the outcome, since honeydew is a pretty under-the-radar fruit, often just seen in fruit salads along with cantaloupe, strawberries, grapes, etc. It’s rarely the “featured” fruit in anything, so even finding a recipe (at all) that featured it was no easy task. Regardless, both of us were surprised by how delicious these smoothies ended up being, and will gladly make more of them in the future. If you’re in the mood for a smoothie and have a few cups of honeydew melon at your disposal, I’d highly recommend you try this recipe. You’ll be glad you did!
Frozen Chocolate Banana Bites
I recently found this recipe in the Forks Over Knives cookbook, and knew I had to try it right away. It’s a wonderfully refreshing treat when you’re in the mood for something sweet. Just make sure to pace yourself. These little bites are wildly addicting!
Chocolate Peanut Butter Six-Ingredient Granola Bars
I’m a huge fan of homemade granola and granola bars. Well this is far and away one of my favorite granola bar recipes that I’ve come across. It’s simple and easy, contains only 6 ingredients, and can be made to suit vegan diets. And unlike many store-bought granola bars, you have complete control over the ingredients, so you can be sure everything is natural and healthy. Depending on how long you bake these bars and whether you use honey or agave, the end result may not be as chewy as the Chewy Fruit & Nut Granola Bars, but it’s delicious and addicting nonetheless.
