This morning, I was jonesing to make a University of Michigan inspired breakfast in honor of the Wolverine’s 2018 football season kicking off. In the past, I’ve made lots of blueberry muffins, pancakes, and even block M pancakes. But today, I wanted to do something new. So after a bit of searching for inspiration, I decided upon these Blueberry Cream Cheese Omelettes, which were inspired and compiled together via a couple different recipes I found. The end result was delectable and delightful. It wasn’t as sweet as a crêpe, and not as savory as a “regular” omelette, but was a nice amalgamation of the two. So if you’re looking for a new recipe that will satisfy both sweet and savory, give this a shot. You’ll be glad you did!

Last night, along with the new Strawberry Lemonade Sangria that I made, my wife and I were in the mood for some BBQ Kebabs. But I also wanted to try out a new recipe for a side dish, and ultimately landed on a recipe for Fresh Corn Cakes. I ended up making them without the “summer salsa” that the original recipe called for, opting instead to top with diced tomatoes, corn, and shredded lettuce. While I think the summer salsa from the original recipe would be delicious, I don’t think I missed it too much with just the tomatoes, corn, and lettuce. If you’re in the mood for a fresh way to use some corn this summer, give this recipe a shot. You’ll be glad you did!

Pizza All Day!

Last Saturday I decided it was high time to try some new pizzas. So I set out on a quest that, thanks to my sister, was coined #PizzaAllDay. Starting at breakfast and continuing through dinner, I ended up making 4 new pizza creations. It was a lot of time in the kitchen, but anyone who knows me knows how much I absolutely love homemade pizza days, so it was well worth it. And since all of these pizzas were new, they’re qualified for my 50 in 15 Challenge, moving me one step closer to my 50th recipe.

For all of these pizzas, I used the Pizza Americana dough recipe from my go-to pizza book, American Pie: My Search for the Perfect Pizza by Peter Reinhart. It’s a great all-purpose dough recipe that works perfectly for me when making pizzas in my oven.

My wife shared a video for breakfast bread bowls with me the other day, and I knew I had to try them immediately. I’m not entirely sure of the source of the video, as it was posted and re-posted on Facebook by many people. Be that as it may, these savory bowls are pretty easy to make, and are very flexible when it comes to fillings. Be forewarned: These bowls are dangerously delicious. You will want to make them again and again!

The other night, I was in the mood for some culinary exploration, and decided to do a “small plates” meal for my wife and I. While searching for ideas and inspiration, I stumbled upon a recipe for Pao de Queijo on the Spice or Die website. Admittedly, I had never even heard of Pao de Queijo. But after reading the post and recipe on Spice or Die, I knew I had to give the recipe a whirl. The end result was nothing short of phenomenal. Each puff was light, airy, and deliciously cheesy. If you’re looking for a nice light and cheesy side dish and/or appetizer for your next meal, look no further. This one is a definite winner!
