Farfalle & Asparagus Alfredo Pot Pie with Balsamic Tomatoes
Tonight, I was in the mood for a new recipe, and wanted to make something special for my wife. She’s a big fan of Alfredo pasta, and also things made with puff pastry. So I concocted a recipe that married them both together. The end result was warm, creamy, flavorful, and flaky – absolute deliciousness! Wet Burrito with Spanish Rice
A few days ago, my wife suggested I make Wet Burritos for dinner some time, which is one of her childhood comfort foods. She filled me in on the typical fillings and toppings that she preferred and left the rest to me. I decided to make some homemade Spanish Rice for part of the filling, as well as a side. And since I have actually never made homemade Spanish Rice or Wet Burritos, this dish also qualified for another recipe for my 50 in 15 Challenge.
The result was absolutely delicious — a true Mexican-inspired comfort food that will be added to my culinary repertoire of go-to recipes!
Healthier Three-Cheese Shells and Cheese
For tonight’s dinner, I decided to do another new recipe for my 50 in 15 Challenge, and tackle a healthified version of “Mac and Cheese”. After scouring around for various recipes, I landed on a recipe for Three-Cheese Macaroni at the Food Network website. I made a couple slight modifications to the recipe, and the end result was a rich and creamy dish, perfect for a chilly winter evening.
Crispy Mashed Potato Cakes
Today I had just enough beef tenderloin on hand to make one more dinner with it. I also had some potatoes on hand, and decided to get creative and try a new way to prepare the potatoes as a side to the tenderloin. (This also gave me a good excuse to tackle my 3rd new recipe for my 50 in 15 Challenge.) I searched a handful of sites for different ways to make mashed potato “cakes”, most of which were same general recipe. So I pared them down to the most basic recipe and gave it a go.
Beef Wellington
To kick off my 50 in 15 Challenge, I decided to tackle Beef Wellington — a recipe I’ve been wanting to make for a while now. I had the pleasure of preparing the meal with my mother-in-law while my wife and I were in town visiting for the holidays. Having found lots of recipes and variations for Beef Wellington, we ended up using a mix of them in the final dish.
