Tonight, I was in the mood for a new recipe, and wanted to make something special for my wife. She’s a big fan of Alfredo pasta, and also things made with puff pastry. So I concocted a recipe that married them both together. The end result was warm, creamy, flavorful, and flaky – absolute deliciousness! If you’re looking for a slightly different take on your next pasta recipe, give this a shot. You’ll be glad you did!

A few days ago, my wife suggested I make Wet Burritos for dinner some time, which is one of her childhood comfort foods. She filled me in on the typical fillings and toppings that she preferred and left the rest to me. I decided to make some homemade Spanish Rice for part of the filling, as well as a side. I also had some potatoes on hand, and decided to get creative and try a new way to prepare the potatoes as a side to the tenderloin. (This also gave me a good excuse to tackle my 3rd new recipe for my 50 in 15 Challenge.) I searched a handful of sites for different ways to make mashed potato “cakes”, most of which were same general recipe. So I pared them down to the most basic recipe and gave it a go.

To kick off my 50 in 15 Challenge, I decided to tackle Beef Wellington — a recipe I’ve been wanting to make for a while now. I had the pleasure of preparing the meal with my mother-in-law while my wife and I were in town visiting for the holidays. Having found lots of recipes and variations for Beef Wellington, we ended up using a mix of them in the final dish.
