Sweet Potato Bean Burger

In honor of National Burger Day, and as part of Meat Free May, I decided to try a new burger recipe based on a recipe for Smoky Sweet Potato Burgers I found on ForksOverKnives.com. I was intrigued by the recipe for a couple of reasons, including the fact that it’s made with sweet potatoes as part of the burger, and it’s both vegetarian- and vegan-friendly. It also gave me another opportunity to add to my list of recipes for my 50 in 15 Challenge. I adapted the recipe a little bit to suit what I had on hand, as well as my own personal preferences. The end result was a nice, moist, and flavorful burger that I will definitely be making again in the future.

Quinoa Quesadillas

Quinoa Quesadillas

A few days ago, some of my coworkers and I were talking about food, and we somehow got on the topic of “Foods that start with Q”. After mentioning a few Q foods, I half-jokingly mentioned that I should make Quinoa Quesadillas — a nice double-Q food dish. Well, one of my coworkers took that seriously, and challenged me to make them by the next time I saw him. Not being one to back away from a culinary challenge, I decided to give it a shot. After all, this also provided me the opportunity to chalk up another new recipe for my 50 in 15 Challenge.

At first, I wanted to make Quinoa Tortillas for the quesadillas, but after discovering the ridiculously high price tag on Quinoa Flour, I decided that I’d just use regular whole-wheat tortillas, and make some Mexican Quinoa to use as part of the filling of the quesadillas. In the end, I was very happy with my creation of Quinoa Quesadillas, and I think my coworker will be pleasantly surprised with my efforts.

Being a big fan of soup, I’m always on the lookout for new recipes — or at least variations on recipes I’ve made before. Well one of my all-time favorite soups is black bean chili, which I recently found a recipe for on the Beachbody Blog. I used their recipe as a base, but made a few tweaks of my own based on what I thought would be good additions. The end result was nothing short of my quintessential black bean chili — it’s hearty, healthy, Vegetarian-friendly, all sorts of delicious, and pairs perfectly with some Sweet Cornbread Muffins. And it made for another nice addition to my 50 in 15 Challenge.

Serves: 6-8

Time: 30 min (active), 4-9 hrs (inactive)

Difficulty: Easy

Having a few days off of work, I decided to tackle another new recipe for my 50 in 15 Challenge. Seeking inspiration for a new and healthy recipe, I sought out the help of my sister, who shared this recipe with me. I’m not entirely sure where she got the recipe, but I’m sure glad she shared it with me, as the end result was absolutely delicious. It’s not too spicy, and is a nice cross between a curry and stew, with the mango adding a nice sweet touch, and the cashews giving a bit of crunch. All-in-all, it was a great addition to my 50 in 15 Challenge, and proved to be a delicious recipe I’ll no doubt make again in the future.

This past Saturday, I was inspired to make something new for my 50 in 15 Challenge. And since it’s still bitterly cold outside here in Michigan, I wanted to make a nice, warm comfort food. So I decided to whip up a hearty and healthy chili in my crock pot that would cook all afternoon and be ready for dinner. The end result was a delicious and hearty bowl of goodness that really helped warm up an otherwise chilly day. And as an added bonus, I also made some delicious and tender Sweet Cornbread Muffins to accompany the chili.
