Cauliflower Steaks with Red Pepper Romesco Sauce & Crispy Breadcrumbs
My wife and I hosted her parents this past weekend, and I was jonesing to make a new recipe while they were here. I had recently received the book The Vegetable Butcher from some friends for Christmas, and was eager to dive in and make some of the recipes. So after a bit of perusing through the book, I landed on this recipe for Cauliflower Steaks, and decided it was a winner for first recipe to make from the book. I had previously seen recipes for cauliflower steaks, but had never actually made them yet, so this was a perfect chance to do so. The end result was nothing short of phenemonal — a recipe I’m sure to make again.
Vegetarian Jambalaya
The other day, I had a strong desire to make something with a little kick. I realized that I haven’t had jambalaya in a while, and wanting to try a homemade version of the popular Louisiana Creole dish that I could count toward my 50 in 15 Challenge, I found a couple of recipes that I fused together to suit my liking. One caveat was that since I’m now vegetarian, I had to substitute out the traditional meat (chicken or sausage) for some vegetarian sausage, which I didn’t mind at all. The end result was a delightful dish that had the perfect amount of spiciness . So if you’re in the mood for something with a bit of kick, give this recipe a shot.
Slow-Cooker Chicken Mango Curry
Having a few days off of work, I decided to tackle another new recipe for my 50 in 15 Challenge. Seeking inspiration for a new and healthy recipe, I sought out the help of my sister, who shared this recipe with me. I’m not entirely sure where she got the recipe, but I’m sure glad she shared it with me, as the end result was absolutely delicious. It’s not too spicy, and is a nice cross between a curry and stew, with the mango adding a nice sweet touch, and the cashews giving a bit of crunch. All-in-all, it was a great addition to my 50 in 15 Challenge, and proved to be a delicious recipe I’ll no doubt make again in the future.
Healthier Three-Cheese Shells and Cheese
For tonight’s dinner, I decided to do another new recipe for my 50 in 15 Challenge, and tackle a healthified version of “Mac and Cheese”. After scouring around for various recipes, I landed on a recipe for Three-Cheese Macaroni at the Food Network website. I made a couple slight modifications to the recipe, and the end result was a rich and creamy dish, perfect for a chilly winter evening.
