Vegetable Sushi Rolls

Today, I was really craving some vegetable sushi rolls. As it happened, I had some spare time in the evening, and being in an experimental mood (and wanting an additional recipe for my 50 in 15 Challenge), I decided to try my hand at making some myself. I had absolutely no idea where to start, so I did what 99% of people do — I turned to Google. Luckily, I found a lot of websites that had step-by-step instructions for how to make sushi rolls. The one I ended up using as my go-to guide was Vegetarian Sushi for Beginners: How to Create a Basic Sushi Roll. While I stuck to the instructions religiously, I did make one change as I swapped out the cream cheese for asparagus. But other than that, I did everything the same.

I must admit that I was hesitant to try my hand at sushi. For one, I didn’t have a bamboo rolling mat, and ended up using a piece of wax paper instead. Also, I’m notorious for over-filling dishes that get wrapped or rolled, like burritos, ravioli, calzones, etc. Despite any hesitation and fear that I had going in, I must say that after all was said and done, I was absolutely floored with the result. It took time and patience to make these rolls, but it was definitely worth it. They are flavorful and delicious, and are a great healthy meal (or side). If you’re a fan of sushi, give these a try. As part of Meat Free May, I’ve found myself eating a fair amount of soups and salads. One of my favorite soups that I’ve made so far has been a Tuscan Vegetable Soup recipe that I found on the Food Network website. I made a couple of minor modifications to the recipe to suit my own preferences and tastes, but the recipe is largely unchanged. It’s a delicious and satisfying recipe, packed with tons of veggies and plenty of flavor. It’s not only been a great addition to my Meat Free May, but also to my 50 in 15 Challenge.

If you’re in the mood for a good bowl of vegetarian- and vegan-friendly soup, give this one a try. You’ll be happy you did.

Being a big fan of soup, I’m always on the lookout for new recipes — or at least variations on recipes I’ve made before. Well one of my all-time favorite soups is black bean chili, which I recently found a recipe for on the Beachbody Blog. I used their recipe as a base, but made a few tweaks of my own based on what I thought would be good additions. The end result was nothing short of my quintessential black bean chili — it’s hearty, healthy, Vegetarian-friendly, all sorts of delicious, and pairs perfectly with some Sweet Cornbread Muffins. And it made for another nice addition to my 50 in 15 Challenge.

I’ve been on a big soup kick lately. And on a relaxing Sunday afternoon (especially during another Michigan winter), there’s something especially comforting about making a fresh batch of homemade soup. I’ve made a variety of soups already, but today I tackled a heart-healthy homemade Minestrone for the first time, and boy was it delicious. It proved to be a perfect addition to a side salad for the first course of our dinner of Lasagna Rolls. And since it was my first time making Minestrone, I am also able to check off another recipe for my 50 in 15 Challenge.
