This Saturday I was in the mood for making a nice new breakfast recipe, and found an amazing recipe for Broiled Brown Sugar Bananas in the Good Housekeeping 400 Calorie Meals cookbook. I decided to try it, but rather than just making them on their own, I chose to pair it with some homemade pancakes. The result was an amazingly tasty, warm, and comforting breakfast that I’ll gladly make again. One of my favorite kinds of pizza is my Sweet Potato Pizza. It’s not your stereotypical pizza, as most Americans envision. It doesn’t use any marinara sauce, doesn’t have any of the standard toppings, yet is delightfully flavorful and unique in its own right. The sweetness of the cheese paired with the savory richness of the caramelized onion and oven-roasted sweet potatoes makes for an absolutely delicious end product that’s sure to please!

Slow Cooker Banana Bread Oatmeal

For this morning’s breakfast, as my wife and I were hosting both of our parents, I decided to make an easy-to-prepare slow cooker meal. After a bit of searching, I found a recipe for Overnight Crockpot Banana Bread Oatmeal on the i heart eating website, and knew I had to make it. Why? Well, oatmeal is hands-down one of my favorite breakfasts. Also, banana bread is one of my mother’s most famous recipes that is my personal favorite comfort food that she makes. So pairing the banana bread flavor with oatmeal seemed like a perfect fit for a comfort food breakfast on a chilly college football Saturday.

In addition to pairing two of my favorite foods in one breakfast dish, this recipe also served another momentous purpose: It’s my 50th recipe for my 50 in 15 Challenge, officially wrapping up a successfully-completed challenge. The end result was indeed a comforting, delicious, and healthful bowl of pure goodness. It paired perfectly with a nice warm cup of coffee, a side of fresh fruit, and a few slices of my mom’s homemade banana bread (which she graciously brought down as a treat for us). Today is going to be a great homemade food day. I know this because I’ve already started the day by making a healthier version of cinnamon rolls for breakfast at my wife’s request. I found the basic recipe on The Picky Eater Blog, making a few minor modifications to it. And while the end result wasn’t quite the same as the tried-and-true old school cinnamon rolls we’re all used to, this lightened (and healthier) version proved to be a suitable substitution for health-conscious eaters like me. It also proved to be a nice addition to my 50 in 15 Challenge.
