This morning, I was jonesing to make a University of Michigan inspired breakfast in honor of the Wolverine’s 2018 football season kicking off. In the past, I’ve made lots of blueberry muffins, pancakes, and even block M pancakes. But today, I wanted to do something new. So after a bit of searching for inspiration, I decided upon these Blueberry Cream Cheese Omelettes, which were inspired and compiled together via a couple different recipes I found. The end result was delectable and delightful. It wasn’t as sweet as a crêpe, and not as savory as a “regular” omelette, but was a nice amalgamation of the two. So if you’re looking for a new recipe that will satisfy both sweet and savory, give this a shot. You’ll be glad you did!

Slow Cooker Banana Bread Oatmeal

For this morning’s breakfast, as my wife and I were hosting both of our parents, I decided to make an easy-to-prepare slow cooker meal. After a bit of searching, I found a recipe for Overnight Crockpot Banana Bread Oatmeal on the i heart eating website, and knew I had to make it. Why? Well, oatmeal is hands-down one of my favorite breakfasts. Also, banana bread is one of my mother’s most famous recipes that is my personal favorite comfort food that she makes. So pairing the banana bread flavor with oatmeal seemed like a perfect fit for a comfort food breakfast on a chilly college football Saturday.

In addition to pairing two of my favorite foods in one breakfast dish, this recipe also served another momentous purpose: It’s my 50th recipe for my 50 in 15 Challenge, officially wrapping up a successfully-completed challenge. The end result was indeed a comforting, delicious, and healthful bowl of pure goodness. It paired perfectly with a nice warm cup of coffee, a side of fresh fruit, and a few slices of my mom’s homemade banana bread (which she graciously brought down as a treat for us). Pizza All Day!

Pizza All Day!

Last Saturday I decided it was high time to try some new pizzas. So I set out on a quest that, thanks to my sister, was coined #PizzaAllDay. Starting at breakfast and continuing through dinner, I ended up making 4 new pizza creations. It was a lot of time in the kitchen, but anyone who knows me knows how much I absolutely love homemade pizza days, so it was well worth it. And since all of these pizzas were new, they’re qualified for my 50 in 15 Challenge, moving me one step closer to my 50th recipe.

For all of these pizzas, I used the Pizza Americana dough recipe from my go-to pizza book, American Pie: My Search for the Perfect Pizza by Peter Reinhart. It’s a great all-purpose dough recipe that works perfectly for me when making pizzas in my oven.

I recently found this recipe for Banana Blueberry Bars from Forks Over Knives, and knew I had to try it. They are moist and fluffy — similar to a banana bread or muffin — and providing a healthy, filling, and delicious treat to provide lasting energy. As an added bonus, they are both vegetarian- and vegan-friendly, so they can be enjoyed by everyone. And as a new recipe that I was trying, I get to add it to the list of recipes in my 50 in 15 Challenge.

Be forewarned: These bars are surprisingly addicting!
