Last night, along with the new Strawberry Lemonade Sangria that I made, my wife and I were in the mood for some BBQ Kebabs. But I also wanted to try out a new recipe for a side dish, and ultimately landed on a recipe for Fresh Corn Cakes. I ended up making them without the “summer salsa” that the original recipe called for, opting instead to top with diced tomatoes, corn, and shredded lettuce. While I think the summer salsa from the original recipe would be delicious, I don’t think I missed it too much with just the tomatoes, corn, and lettuce. If you’re in the mood for a fresh way to use some corn this summer, give this recipe a shot. You’ll be glad you did!

This Saturday I was in the mood for making a nice new breakfast recipe, and found an amazing recipe for Broiled Brown Sugar Bananas in the Good Housekeeping 400 Calorie Meals cookbook. I decided to try it, but rather than just making them on their own, I chose to pair it with some homemade pancakes. The result was an amazingly tasty, warm, and comforting breakfast that I’ll gladly make again. I recently found this recipe for Banana Blueberry Bars from Forks Over Knives, and knew I had to try it. They are moist and fluffy — similar to a banana bread or muffin — and providing a healthy, filling, and delicious treat to provide lasting energy. As an added bonus, they are both vegetarian- and vegan-friendly, so they can be enjoyed by everyone. And as a new recipe that I was trying, I get to add it to the list of recipes in my 50 in 15 Challenge.

Since I was making Slow-Cooker Turkey Chili this weekend, I decided to add in another new recipe for my 50 in 15 Challenge and make some Sweet Cornbread Muffins to accompany the chili. I found many variations of cornbread recipes, with the biggest difference being the flour-to-cornmeal ratio. And being a fan of sweet cornbread, I specifically looked for a recipe that used sugar. The recipe I ended up using is the Cornbread Muffins recipe by Jennifer Segal from the website Once Upon a Chef. And the end result was absolutely delicious — a perfect, tender, and sweet pairing to my Slow-Cooker Turkey Chili.
