Black Bean Chili

Being a big fan of soup, I’m always on the lookout for new recipes — or at least variations on recipes I’ve made before. Well one of my all-time favorite soups is black bean chili, which I recently found a recipe for on the Beachbody Blog. I used their recipe as a base, but made a few tweaks of my own based on what I thought would be good additions. The end result was nothing short of my quintessential black bean chili — it’s hearty, healthy, Vegetarian-friendly, all sorts of delicious, and pairs perfectly with some Sweet Cornbread Muffins. And it made for another nice addition to my 50 in 15 Challenge.


  • 1 tbsp. olive oil
  • 1 medium onion, diced
  • 2 stalks celery, diced
  • 1 medium carrot, diced
  • 1 clove garlic, minced (or 1-2 tsp. garlic powder)
  • 3 c. low-sodium vegetable broth
  • 4 oz. tomato paste
  • 4 oz. can diced green chiles
  • 15 oz. can black beans, drained and rinsed
  • 15 oz. can cannellini beans, drained and rinsed
  • 15 oz. can corn, drained and rinsed
  • 1 tsp. ground cumin
  • 1 tsp. chili powder
  • Salt and pepper, to taste


  1. In medium saucepan, heat oil over medium-high heat. Add onion, celery, and garlic. Cook for 3-4 minutes, stirring frequently, until tender.
  2. Add carrots, broth, tomato paste, chiles, spices, beans, and corn. Add salt and pepper, to taste. Bring to a boil, then reduce heat to low and cook at a gentle boil, stirring occasionally, for 15-20 minutes.
  3. Divide into serving bowls. Eat. Enjoy.
  4. Optional: If desired, top with low-fat sour cream, chives, and/or shredded cheese.


There really isn’t anything special to note for this recipe. If you’re a fan of black beans (like I am), this is a perfect soup — hearty, healthy, and delicious. It reheats very well, which works out for me since I make soup with the full intention of having leftovers for lunches for the upcoming week.
