Spicy Roasted Chickpeas

Spicy Roasted Chickpeas

While perusing on Flipboard the other day, I came across an article for 5 Healthy Vegetarian Snacks to Serve on Labor Day. In the process of skimming over the article, I saw a recipe for these Spicy Roasted Chickpeas and knew I had to make them right away. Not only were they super-easy to make, but they indeed proved to be a delicious, crunchy, and healthy snack option. The next time you’re in the mood for a crunchy snack, whip up a batch (or three) of these. You’ll be glad you did!

  • 15 oz. can chickpeas
  • 2 tbsp. olive oil
  • Sea salt (to taste)
  • 1/2 tsp. garlic powder
  • Red pepper flakes (to taste)

  1. Preheat oven to 400° F, and prepare a rimmed baking sheet with parchment paper.
  2. Rinse and drain the chickpeas. Spread them out on a paper towel and blot until completely dry.
  3. In a mixing bowl, toss the chickpeas with olive oil, salt, garlic powder, and red pepper flakes. Spread the seasoned chickpeas on the prepared baking sheet and bake for 25-35 minutes, or until crunchy. (Make sure not to bake them for too long, or else they’ll burn.)
  4. Let cool, then store in a paper bag or parchment paper-lined container.

These crunchy little morsels are a delicious, protein-rich snack that is a hands-down better alternative to junk food snacks like potato chips. The only warning about this recipe, as noted above, is to be sure you don’t bake the chickpeas for too long, or else they’ll burn. And by modifying the amount of spice you use, you can make them as spicy or mild as you like.

Bon Appétit!
