Mocha Chip Larabar

I love making homemade granola and energy bars, and recently found a recipe for a Mocha Chip Larabar on the One Green Planet website. The recipe is ridiculously easy to make, is vegetarian- and vegan-friendly, and is a great source of raw energy. If you’re in the mood for a high-quality, sweet snack, look no further. But be warned: These bars are wildly addicting!
Ingredients
- 1/2 c. raw almonds
- 1/2 c. raw cashews
- 1 1/2 c. packed dates (pitted)
- 3 tbsp. unsweetened cocoa powder
- 1 tsp. instant coffee
- 1 1/2 tsp. vanilla extract
- 1/4 c. dark chocolate chips
Directions
- Place nuts and dates into a food processor and pulse until blended well. Add in the cocoa powder, coffee, vanilla, and chocolate chips and blend more until everything is chopped up, well-mixed, and the texture is moldable.
- Remove the mixture and form into whatever shapes you prefer. (Note: It’s easiest to start by forming a ball about the size of a golf ball, and then flatten/mold as needed.)
- Store in a sealed container in the fridge.
Notes
There isn’t much extra to note about this recipe. The hardest and most time-consuming part is molding the bars after everything is processed together. That aside, this recipe is a snap to make, and is a great go-to snack when you need a pick-me-up.
