Frozen Chocolate Banana Bites

Frozen Chocolate Banana Bites

I recently found this recipe in the Forks Over Knives cookbook, and knew I had to try it right away. It’s a wonderfully refreshing treat when you’re in the mood for something sweet. Just make sure to pace yourself. These little bites are wildly addicting!

  • 1/3 c. maple syrup
  • 1/3 c. almond milk
  • 1/3 c. cocoa powder
  • 2 tbsp. agave (or honey)
  • 2 tsp. vanilla
  • 2 ripe bananas
  • 2 c. oats
  • Grape Nuts

  1. Puree the maple syrup, milk, cocoa powder, vanilla, bananas, and agave/honey in a food processor until well blended. Transfer to a large bowl, add the oats, and mix well.
  2. Line a baking sheet with wax or parchment paper. Put the Grape Nuts in a bowl. Using a melon baller or other small scoop, make small bite-sized balls of the chocolate/banana/oat mixture and drop into the bowl of Grape Nuts. Turn over, covering the ball with Grape Nuts on all sides, then transfer to the baking sheet.
  3. Place the baking sheet in the freezer to freeze the treats. After they are frozen, transfer to an airtight container and store in the freezer.

The big thing to note is that things tend to get a little messy when you’re forming the mixture into bite-sized pieces, and I found it easiest to use a small scoop, rather than trying to form it with my hands. But other than that, it’s pretty straightforward. It’s also worth noting that the original recipe didn’t use any agave/honey. But since I used unsweetened cocoa powder, I added it in for some sweetness rather than straight-up sugar.

Bon Appètit!
