Mexican Rice

I like to make a lot of Mexican dishes, and find myself coming back to using this recipe for Mexican Rice a lot. It’s simple and straightforward, and is a wonderful, flavorful addition to many Mexican dishes.


  1. 1 c. white rice (dry)
  2. 1/2 c. diced onion
  3. 1/2 c. tomato sauce
  4. 1 1/4 c. chicken broth
  5. 2 tbsp. olive oil
  6. 1 tsp. cumin
  7. 1 tsp. paprika
  8. Sea salt and pepper, to taste


  1. In a sauce pan, heat oil over medium heat and add the rice, stirring constantly. Add salt, pepper, and spices to taste and cook until lightly browned.
  2. Stir in the onions and cook until tender, about 3-5 minutes.
  3. Stir in the tomato sauce and broth and bring to a boil. Reduce heat to low, cover, and simmer until the liquid is fully absorbed and rice is cooked, about 20-25 minutes.
