This morning for breakfast, I decided to make my wife and I some smoothies. And with a full honeydew melon on hand to utilize, I thought I’d try out a recipe I found on the Food Network website (with one small additional ingredient). I was admittedly nervous about the outcome, since honeydew is a pretty under-the-radar fruit, often just seen in fruit salads along with cantaloupe, strawberries, grapes, etc. It’s rarely the “featured” fruit in anything, so even finding a recipe (at all) that featured it was no easy task. Regardless, both of us were surprised by how delicious these smoothies ended up being, and will gladly make more of them in the future. If you’re in the mood for a smoothie and have a few cups of honeydew melon at your disposal, I’d highly recommend you try this recipe. You’ll be glad you did!

The other night I wanted to try a new recipe, and was jonesing for some cauliflower. My cousin shared a Cauliflower Mac n Cheese recipe from the My Fitness Pal blog. With a few minor modifications to the original recipe, I ended up with a delicious and healthy result that I highly suggest you make. If you love “mac and cheese”, I see no reason why you won’t love this even more!

This Saturday I was in the mood for making a nice new breakfast recipe, and found an amazing recipe for Broiled Brown Sugar Bananas in the Good Housekeeping 400 Calorie Meals cookbook. I decided to try it, but rather than just making them on their own, I chose to pair it with some homemade pancakes. The result was an amazingly tasty, warm, and comforting breakfast that I’ll gladly make again. So if you’re in the mood for a new twist on boring old pancakes, give this a try — it’s super easy, and is sure to please your taste buds.

One of my favorite kinds of pizza is my Sweet Potato Pizza. It’s not your stereotypical pizza, as most Americans envision. It doesn’t use any marinara sauce, doesn’t have any of the standard toppings, yet is delightfully flavorful and unique in its own right. The sweetness of the cheese paired with the savory richness of the caramelized onion and oven-roasted sweet potatoes makes for an absolutely delicious end product that’s sure to please!

On a recent trip to visit my sister and her family, my wife and I were treated to a delightful array of meals. I had the pleasure of helping with most of the meals, both because I enjoy cooking, as well as to help alleviate the burden of cooking for a group of 9. On the very first night we were there, she made us this recipe for Muffin Tin Lasagnas, which is a hands-down winner of a recipe. It’s simple to make, tastes absolutely delicious, and is a quick-and-easy go-to recipe for both an entrée or a side dish. It’s also a wonderful dish to serve when you want or need to use different ingredients for different people, like making half with a meat filling and half with veggies, thereby catering to both vegetarians (like me) and non-vegetarians at the same time. If you’re a fan of lasagna, you must try this recipe. You’ll be glad you did!
