Today is going to be a great homemade food day. I know this because I’ve already started the day by making a healthier version of cinnamon rolls for breakfast at my wife’s request. I found the basic recipe on The Picky Eater Blog, making a few minor modifications to it. And while the end result wasn’t quite the same as the tried-and-true old school cinnamon rolls we’re all used to, this lightened (and healthier) version proved to be a suitable substitution for health-conscious eaters like me. It also proved to be a nice addition to my 50 in 15 Challenge.

Today I had just enough beef tenderloin on hand to make one more dinner with it. I also had some potatoes on hand, and decided to get creative and try a new way to prepare the potatoes as a side to the tenderloin. (This also gave me a good excuse to tackle my 3rd new recipe for my 50 in 15 Challenge.) I searched a handful of sites for different ways to make mashed potato “cakes”, most of which were same general recipe. So I pared them down to the most basic recipe and gave it a go.

After kicking off my 50 in 15 Challenge by making Beef Wellington, I had some additional beef tenderloin that I needed to use, so I decided to concoct a tasty appetizer with some of it. And since my wife and I have become big fans of trying new types “bruschetta” for appetizers for our meals, I created a new variation using beef tenderloin, goat cheese, arugula, and roasted tomatoes.

To kick off my 50 in 15 Challenge, I decided to tackle Beef Wellington — a recipe I’ve been wanting to make for a while now. I had the pleasure of preparing the meal with my mother-in-law while my wife and I were in town visiting for the holidays. Having found lots of recipes and variations for Beef Wellington, we ended up using a mix of them in the final dish.

50 in 15 – Fifty New Recipes in 2015

I don’t technically subscribe to New Year’s resolutions, but rather, like to give myself a new challenge on which to embark. Over the past few years, I’ve successfully completed a number of such challenges — some list-based and therefore having a definite end, while others are ongoing.

This year, I’ve decided to embark on a culinary challenge, which I am calling “50 in 15”. The challenge is simple: I will make 50 new recipes throughout the course of 2015. I will use this site to document this challenge and keep myself accountable. I will also be sure to include each of the recipes I make, along with notes and thoughts on each.
