Sweet Breakfast Bruschetta
If you have a bit of a sweet tooth and want a healthier breakfast option than many sweet breakfast treats, this recipe is for you. It’s quick and easy to prepare, and is a really nice change from a regular, run-of-the-mill breakfast. And even with a touch of sweetness, it still provides a healthy and attractive breakfast item that can be eaten without utensils.
Savory Breakfast Bruschetta
Some mornings, we all just feel like changing it up a bit for breakfast. For instance, rather than just doing simple scrambled eggs with a side of toast, why not combine the two and make a healthy, savory breakfast bruschetta? It’s ridiculously easy to prepare, and really doesn’t take that much longer. And the result is a delicious, healthy, and attractive breakfast item that can be eaten without utensils.
Individual Breakfast Quiche
Having started today by making a healthier version of cinnamon rolls for breakfast, I also decided to pair the cinnamon rolls with a light and healthy breakfast quiche. I’ve made a variety of quiches and frittatas in the past, but this morning, decided to do smaller, individual-sized quiches. The best part of doing individual quiches is that you can add in whatever fillings you want based on everyone’s personal preference. (I chose to use broccoli florets and diced tomatoes this morning.) And since this was the first time I tackled individual quiches, it was yet another good addition to my 50 in 15 Challenge.
Healthified Cinnamon Rolls
Today is going to be a great homemade food day. I know this because I’ve already started the day by making a healthier version of cinnamon rolls for breakfast at my wife’s request. I found the basic recipe on The Picky Eater Blog, making a few minor modifications to it. And while the end result wasn’t quite the same as the tried-and-true old school cinnamon rolls we’re all used to, this lightened (and healthier) version proved to be a suitable substitution for health-conscious eaters like me. It also proved to be a nice addition to my 50 in 15 Challenge.
