This evening I found myself in the mood to add another recipe to my 50 in 15 Challenge. I had some extra colored bell peppers on hand, and inspired by my similarly-named Stoplight Chicken Pizza, I decided to throw some of them together with a few other veggies and some chicken in a skillet, and serve over some brown rice for a nice, healthy dinner. I must admit that the end result is quite phenomenal. It’s easy to make, is very flavorful, and has just a bit of a kick from the crushed red pepper that’s added. This is most definitely a recipe I’ll be making again soon.

For a while now, I’ve had a hankering to try my hand at making a nice, healthy black bean burger as part of my 50 in 15 Challenge. Well tonight, I finally gave it a shot. I found a great recipe from the Beachbody Blog that I ended up using. It’s vegetarian-friendly, is a great source of protein, and is an amazing (and dare I say, better tasting) substitute for many meat-based burgers. The process of making these burgers is pretty straightforward and easy, but I will warn you that it gets a bit sticky once you start to form the patties. Trust me though, it’s well worth it, as the end result is nothing short of phenomenal.

I’ve made homemade granola bars before, but today I was in the mood to try something different — something I could also add to my 50 in 15 Challenge. I stumbled upon a recipe for Quinoa Pistachio Granola Bars, which was adapted from a recipe from Cooking Light. After looking over the recipes, I knew that I had to give it a shot right away. The end result is a healthy and healthy (and admittedly, crumbly) snack with a good mix of sweet and salty.

Having a few days off of work, I decided to tackle another new recipe for my 50 in 15 Challenge. Seeking inspiration for a new and healthy recipe, I sought out the help of my sister, who shared this recipe with me. I’m not entirely sure where she got the recipe, but I’m sure glad she shared it with me, as the end result was absolutely delicious. It’s not too spicy, and is a nice cross between a curry and stew, with the mango adding a nice sweet touch, and the cashews giving a bit of crunch. All-in-all, it was a great addition to my 50 in 15 Challenge, and proved to be a delicious recipe I’ll no doubt make again in the future.

Since I was making Slow-Cooker Turkey Chili this weekend, I decided to add in another new recipe for my 50 in 15 Challenge and make some Sweet Cornbread Muffins to accompany the chili. I found many variations of cornbread recipes, with the biggest difference being the flour-to-cornmeal ratio. And being a fan of sweet cornbread, I specifically looked for a recipe that used sugar. The recipe I ended up using is the Cornbread Muffins recipe by Jennifer Segal from the website Once Upon a Chef. And the end result was absolutely delicious — a perfect, tender, and sweet pairing to my Slow-Cooker Turkey Chili.
